Pimento cheese

Crackers topped with pimento cheese.

A southern favorite. I’ve never met anyone who likes cheese who doesn’t like this simple spread, no matter where they’re from. My boys stand at the kitchen counter with the bowl and a box of crackers.

Pimento cheese

1 8 oz. block sharp cheddar (I like Cabot’s sharp white, but use what you like best)
2 oz. cream cheese
mayonnaise (I use two big tablespoon blobs because I like mayonnaise, but start with a little and add more to suit your taste)
1 or 2 tablespoons diced pimentos
1/2 tsp Worcestershire sauce
a few drops of hot sauce, to taste
(Let’s be honest–once you get the basic recipe down, it’s all to taste.)

Shred cheddar cheese. Mix all ingredients with a fork. Allow to sit in refrigerator as long as possible to blend flavors. Serve with crackers or spread on toast.

The pimentos give it a slightly orange or pink color, even though I use white cheddar.

From another recipe for cheese spread, I learned serve it with strawberry preserves and add a little dollop on top of the individual crackers. It is a wonderful mix of sweet and savory.
