I am a huge fan of pumpkin.  It goes right up there with banana as one of my all-time favorite flavors.  I’m sitting here eating pumpkin fudge, which is more delicious than you can possibly imagine unless you have some for yourself.  I love pumpkin pie, pumpkin coffee, pumpkin ice cream and pumpkin bread.

In case you’ve never had pumpkin bread, it is well worth your time to make some.  Here is my mother’s recipe

Pumpkin Bread

Grease and flour 2 loaf pans, 4 small loaf pans or muffin tins. Preheat oven to 325°.

  • 3 cups sugar
  • 2 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1 tsp ground nutmeg
  • 3-1/3 cup flour

Mix all dry ingredients with wire whisk.

Beat together:

  • 1 cup oil
  • 4 eggs
  • 1 can pumpkin

Combine mixtures and fold together by hand. Pour in pans and bake for 1 hour. Muffins bake 35 min.

You can add raisins or nuts but my family likes it plain.  Happy Fall, y’all!
