One of the greatest things about this time of year is the food that we have that we don’t eat any other time of year. One of my family’s favorites that we only eat for Thanksgiving and Christmas are Sweet Potatoes. This particular recipe comes out of my grandmother’s Junior League cookbook from 1964, but I’m sure many cookbooks like it have similar recipes. But since mine is particularly good, here it is:
Sherried Sweet Potatoes
2 large cans of sweet potatoes
3 tbsp. butter
1/2 cup sugar
2 tbsp. orange juice
2 tbsp. sherry
marshmallows
Mash sweet potatoes with butter, sugar, orange juice and sherries. Put in a 2 quart baking dish. Bake at 350 degrees for 30 minutes. Top with marshmallows and bake until marshmallows are lightly browned.
Sound sweet? Yes, it is. I advise balancing this sweetness with a green vegetable of your choice. Happy eating!
