Welcome to Christmas Eve! What a wonderful family day! I am so excited to have everyone together–husband, sons, mother, sister, best friend. I don’t know about you, but I will be spending my day cooking, at least until it is time to do the stockings. Yes, stockings for grown-ups, because as you know I believe in Santa Claus for every single age. First up, a much loved family Christmas recipe:
Garlic Potatoes
- 4 large baking potatoes
- 2 stalks celery, finely chopped
- 1 small onion, finely chopped
- 2-3 cloves garlic, minced
- 1/2 cup butter or margarine, melted
- 3 tbsp. chopped fresh parsley
- 1/2 tsp salt
- 1/2 tsp pepper
Combine all ingredients; place in a greased 12x8x2 inch baking dish. Bake at 350 degrees for 1 hour, 15 minutes or until potatoes are tender, Yield 6-8 servings.
